What's New in V3 vs V2?
The headline changes in the V3 are usability improvements that address real-world gripes from V2 owners:

In practice, this matters most for:
- Light roasts — lower initial pressure prevents channeling in denser, harder-to-extract beans
- Turbo shots — high flow, lower pressure profiles that extract quickly and cleanly
- Lever-style profiles — mimicking the declining pressure curve of a lever machine
It does not replace a full pressure profiling system like a Decent or a Synesso. It's an analog paddle, not a programmable pump controller. But it gives you meaningful, tactile control that most machines at this price simply don't offer.

- Mara X ($1,699) — heat exchanger with a clever thermoblock hybrid. Pull a shot and steam immediately without waiting. No flow control. Excellent for busy home use where you're making multiple drinks in a row.
- Bianca V3 (~$2,500+) — true dual boiler means brew and steam temperatures are fully independent. Add the flow control paddle and you have a fundamentally more capable machine for dialing in espresso.
If you drink mostly milk drinks and want a fast, reliable workhorse: Mara X. If you care deeply about dialing in espresso, pull a lot of single-origin shots, or want room to grow as a home barista: Bianca V3. The Bianca asks more of you — it rewards skill. The Mara X is more forgiving.
